Healthy IKI Soba

Nestled in 1 Raffles Place, the humble soba bar owned by Mr Yusuke specialises in noodles made fresh in house from 100 % organic buckwheat powder. Here, the flour is imported from Akita prefecture once every 3 months. The soba bar offers a menu of at least 4 different Seiro (cold soba) like Mango Salsa Soba, and 8 Tanemono (hot soup soba) including the signature Duck Soba.

Super Soba Set (Inclusive of Quinoa Salad & Green Tea, $16)

As if the existing soba options are not wholesome enough, Mr Yusuke actually levelled up the game by concocting the Super Soba Set, which consists various nutritionally dense ingredients (superfood). All these are done not only to make us feel super inside out, but to nourish our health & taste buds too! The wonderful thing is the set are both low in calories (490 kcal), and high in protein, thus keeping us fuller for longer. And yes, we can enjoy the soba either the Seiro or Tanemono way!

Super Soba

Our team opted for the Super Soba Set in Tanemo style. We totally love how the alfalfa sprouts not only add an interesting “crunchiness & clean” sensation to the soba, but also enhances its nutritional value. Studies found that alfalfa sprouts are rich in saponins (plant compounds), a natural and effective cholesterol reducer. Saponins decrease the absorption of cholesterol in the gut, while increasing the excretion of compounds used to make new cholesterol.

Quinoa Salad

The generous bowl of colourful quinoa salad, not only pleases our eyes, but also tantalises our taste buds with its tinge of garlicky-nutty flavour.

For the uninitiated, quinoa has been highly regarded for its high protein value, not because it has high protein, but rather it is a source of essential amino acids, like lysine, which cannot be synthesised in the body.It also contains large amounts of flavonoids, including quercetin and kaempferol, which are potent plant antioxidants.

If you are non-adventurous with your food, don’t worry! The salad does contain conventional ingredients like chickpeas and Shimeji mushroom.

Chickpeas actually contains high level of dietary fibre---the magic substance needed to bulk up the stool, and keep bowel movement regular (say bye to constipation).  While, Shimeji mushrooms are loaded with beta glucans (according to the National Cancer Institute of Japan), which boost our immunity by activating immune cell response and stimulating the production of white blood cells.

The vain pots among us were delighted to find that the usual lettuce in the salad were replaced with spinach & purple cabbage. Spinach packs Vitamin C, which foster the growth of new skin cell, and support the production of collagen, to keep the skin elastic and youthful. While, purple cabbage is one of the best natural source of glucosinolates that have anti-carcinogenic properties. In the body, glucosinolates become compounds called isothiocyanates, which inhibits growth of breast cancer cells.
