3 Easy Picnic Recipes That Your Waistline Will Love

Ditch the couch potato, grab your colourful aviators and head out for summer picnic now. The best part is, you can now prepare your picnic spread without any fuss & indulge in them without compromising your calories count.

Appetiser: Tutti Fruity Crudité

Serves: 4 adults

Ingredients

1 fresh mango peeled, pitted and sliced
1 fresh papaya peeled, deseeded and sliced
1 fresh Japanese cucumber, sliced
100g cherry tomatoes, halved
200g blueberries
1 banana
4 tbsp Marigold Natural Low Fat Yoghurt

Directions

1. Plate the mango, papaya, cucumber, cherry tomatoes and blueberries on to a serving plate
2. Slice the banana into a bowl and mash with a fork. Add the yoghurt and stir well to mix.
3. Serve, dipping the pieces of fruit into the banana mixture.

Handy Tip

Remember to prepare the banana dip shortly before serving, so that it doesn't go brown.

Ingredients

4 whole-wheat tortillas
4 tbsp low fat soft cheese
4 tbsp Marigold Low Fat Natural Yoghurt
120g skinless, boneless roast chicken breast chopped
100g sweetcorn
¼ cucumber
1 pinch ground black pepper
2 handfuls lettuce leaves

Directions

1. Lay out the tortillas on a clean work surface.
2. Mix the soft cheese and yoghurt in a bowl till smooth.
3. Add the chicken, sweetcorn and cucumber. Season with some pepper, then mix well.
4. Spread an equal amount over each wrap, then top with the lettuce.
5. Roll up each wrap tightly, slice in half, and then wrap in cling film.
6. Keep refrigerated until ready to serve.

Handy Tip

If you’re packing these wraps into a lunch box, try to remember to put a small ice pack in with them to keep them cool and fresh.

Ingredients

2 cups of boiling water
4 packets of Lipton Bavarian Wild Berry Pyramid Tea bags
½ cup sugar
1 cup strawberries sliced and halved

Directions

1. Brew the tea bags for 5 minutes using boiling water.
2.Remove the tea bags from the boiling water, and dissolve the sugar in it.
3. Combine tea with strawberries in a bowl, pour the tea evenly into 8 paper cups.
4. Insert wooden sticks into the centre of each cup, and freeze for 1 hour.
5. To serve, press firmly on bottom of paper cup to remove.

Handy Tip

Prepare a small ice pack with salt added in, and place it in your cooler bag to prevent the popsicles from melting. Alternatively, use dry ice.
